Our menu uses fresh ingredients following traditional recipes, cooking styles and techniques such as slow cooking sauces and over night tandoori marinades to develop rich flavoursome dishes fresh each day. Indian food though has evolved over many centuries and thrived under the many dynasties and rulers that India has had. Chefs competed with each other to create exotic delicacies for their Rajah's (king's) and out do their neighbouring kingdoms. The result is centuries of study to the art of cooking and an in depth repertoire of delicious recipes. Generally Indian cuisine can be broken up into to North and South Indian Cuisine. North Indian cooking in particular revolves around wheat (breads like Roti, Paratha and Naan), fresh vegetables (Sabji), spices (not always chili), and cream or butter. South Indian food centres on rice with their meals and Samber (a type of curry). At Gandhi Indian Restaurant our cooking is derived from traditional North Indian cuisine to create dishes that are deliciously balanced with fresh spices and fresh ingredients. Typical North Indian dishes include the famous Butter Chicken, variety of Naan breads and Roti (wholemeal bread) and dishes from the Tandoor (Tandoor being a very large upright clay oven) like Tandoori Chicken and Barah Kababs.
